Momma’s Day Out

So Saturday was my first day away from the babies! It was very hard to leave them and yes I cried but I really needed a few hours of relaxation. I've gotten a lot of advice about babies and myself, and one thing that’s a constant for everyone is to “take time for yourself”; So I did exactly that. My wonderful step mother in law (who is like a mom to me and one of my best friends) took care of my sweet angels and had her friend, Lori, help her. Me and my friend Jill left the house around 11:30 and met my dad for lunch at Logan’s! It was delicious!! Then we went and got out hair colored, cut and styled!! I usually color my own hair, and it kills my back; so it felt good to finally have someone do my hair and have a massage in the shampoo chair! After getting our hair done we went to the outlet malls to do a little shopping! I went to carters and bought the babies some new outfits! My shopping trips are a little different now hah! I was thinking about them the whole time and what else I could buy them!

Yes, my hair looks awful in these pictures hah! I think these pics are so funny because you can tell I started crying. I started laughing to try and stop the crying! Poor JP’s head is just hanging…whoops momma!


This was my delicious lunch!! MmmMM! We didn’t even have time to eat it! By the time our food came, we realized it was time to go to our appointments! So we packed up the food and ate it while getting our hair done!






When I got home I loved on these sweet babies;)

I feel so refreshed and so glad I got out of the house … FINALLY! It made me miss my babies and love on them more when I got home but I know it is good for me and good for them.

2 Months!

Jocelynn and JP turned 2 months old on Friday!! Time is just flying by faster and faster and it breaks my heart but at the same time I'm happy about seeing all the new things they are doing.

*Feeding- They are both eating 3 1/2-4 1/2 oz every feeding! Hungry babies!!

*Clothing/Diaper- They are both in newborn clothes. I don’t think that will last long because the clothes are getting a little tight;) Still in newborn diapers. I was wrong about the size 1 diapers… I thought they would be able to wear them but the size 1 is so much bigger than the newborn!!

*Activity- JP is rolling over!! He amazes me everyday at how strong he is and both Jocelynn and JP are so observant! Their eyes follow us everywhere we go!

*Sleep- They still wake up between 230-330 to eat but most nights will sleep from 9-4! If they sleep from 9-4 for more than 2 nights I'm going to start them on a new schedule but it is a requirement from MOMs on Call for them to sleep through the night before starting it.

They have their first “real” appointment on Wednesday! I'm scared because they will get shots at this one;( I hope I don’t cry!

I can tell a huge difference between month 1-2! They’ve gotten so big!

Ive been getting more smiles from my little girl this week…


Jocelynn went out in her sequin boots last weekend! We dressed her up to go to Arbys haha… yup that’s our life;)


JP LOVES looking at stuff! He cracks me up.. I will be cleaning the house or doing some chore and ill go and check on him and hes just looking around! Sweet boy!


We took them to eat breakfast yesterday! The first time I've taken them to a restaurant and they did wonderful! We took them during their naptime so they would sleep, but they stayed awake the whole time and just looked around.


Don’t you love my husbands fake smile?


JP is starting to smile a little bit when he is awake but the smiles after he eats and falls asleep are hilarious!

Tasty Tuesday (Pinspired)

I have been on a roll cooking meals I have pinned!! It feels so good to be cooking again and I love trying new recipes!

The first recipe I tried was Homemade Chicken Noodle Soup in the crock pot!!…MMMmmmmMM

Chicken and Noodle Soup
5 cups of chicken broth (boxed or can is fine)
One 10.75 oz can cream of chicken soup
1/2 cup onions, chopped fine
1/2 cup celery, chopped fine
1/2 cup carrots, chopped fine
1/2 cup green onions, sliced
One 15 oz can of whole kernel corn, drained
Salt and Pepper to taste
1 1/2 cup Egg noodles
2 cups cooked chicken chopped or 2 cans canned cooked chicken
Add everything but the noodles and cooked chicken to the crock pot on Low for 5-6 hours, the last hour turn on High, and add noodles and chicken. Remember, if you do this in the morning, and don’t have a timer on your crock pot, use a lamp timer, they work wonderful.
*I cooked it on high for about 2 1/2 hours and then added noodles and cooked for another hour. I used the smaller egg noodles so they would cook faster. I also added another can of cream of chicken soup and filled the can with water and added it.  SO DELICIOUS!!

The next recipe I made is a new twist on those melt in your mouth chocolate, oatmeal, no bake bars I loved as a kid! Here is the link to pin it!

1/2 cup butter (1 stick; or margarine, Earth Balance)
2 cups white sugar
1/4 cup brown sugar
6 tablespoons cocoa powder (I used TJ’s)
1/2 cup milk (cow, vegan, soy, nut, etc. You could probably use water, too, and if so, I’d use about 2/3 c water)
1/2 heaping cup peanut butter
1 teaspoon vanilla extract
3.5 cups oats (I used whole rolled Old-Fashioned Quaker Oats)
1/4 cip chocolate chips, 1/4 cup peanut butter chips (or butterscotch/white chocolate chips, toffee bits, chopped candy bits, Reese’s Pieces, etc.), optional
Line an 8×8 or 9×9 pan with aluminum foil and spray it with cooking spray and set it aside. In a medium saucepan, combine butter, sugars, cocoa powder, milk and heat over medium-high to high heat, stirring to encourage the ingredients to melt and combine. Once all items have melted and combined, allow the mixture to boil for 90 seconds, stirring continuously.
After 90 seconds, turn the heat off and add the peanut butter and vanilla extract (careful when you add the vanilla, it could bubble up a bit on you) and stir until smooth. Then add the oats and stir to coat.
Pour batter into prepared pan, spreading it evenly into the pan. If adding any optional chips to the top of the bars, add them now; pressing them into the mixture lightly with a spatula. (If you press them into the batter too deeply, they will probably melt; not bad, but not what I intended for which is why I kept them at the surface level to avoid complete melting)
Place pan into the freezer and freeze at least 30 minutes, or until bars have set up, before slicing and serving. (I take the bars out of the pan by holding the edge of the foil and place the whole foil “slab” onto a cutting board rather than cutting them inside the pan because I can be neater on a cutting board and I also don’t carve up the bottom of my pan with knife marks).
Optional: Frost them with a vanilla or cream-cheese/buttercream frosting, or use a melted white chocolate drizzle or a melted peanut butter drizzle over the top, too.
Yields: 16 squares. Or cut them into bar-shapes for approximately 12 bars, depending on size used. Store extra squares on the countertop, refrigerator, or freeze,  plastic-wrap them for use in lunches or snacks.
Last but not least I made Chicken Rollatinis!! They were AWESOME and weight watcher friendly!!

Chicken Rollatini with Spinach alla Parmigiana
  • 8 thin chicken cutlets, 3 oz each **I used chicken tenders
  • 1/2 cup whole wheat Italian seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese, divided
  • 6 tablespoons egg whites or egg beaters
  • 5 oz frozen spinach, squeezed dry of any liquid
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella (I used Polly-O)
  • olive oil non-stick spray (I use my Misto)
  • 1 cup pomodoro sauce or your favorite marinara sauce
  • salt and pepper to taste
Wash and dry cutlets, season with salt and pepper. Preheat oven to 450°. Lightly spray a baking dish with non-stick spray. Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another
Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese. Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down. Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with olive oil.
Bake 25 minutes. Remove from oven, top with sauce then cheese.
Bake until cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.
** I ran out of mozzarella, so I put American cheese on top!
**I made my own Italian bread crumbs. Here's how:
I took half a loaf of white bread and out it in the food processor with salt, pepper, Italian seasoning and garlic salt (just add what you think is right). Then I put the crumbs on a baking sheet, sprayed with olive oil and baked until golden brown!!

7 Weeks**

The babies are 7 weeks old now!! I cant believe that in just one more short week they are going to be 2 months old;( My babies are growing so fast.

*Jocelynn must be going through a growth spurt because on Thursday morning she ate 6 oz of formula/bm! Then at the next feeding she ate 5 oz! I couldn’t believe it! She went back to eating 3 1/2 to 4 oz the next day but still this baby girl must be growing!

*JP is going through a growth spurt I think too. He is sleeping A LOT!

*This week they had their first Valentines day and we all celebrated by staying at home. I thought about venturing out to a restaurant for the first time but changed my mind when I realized vday is the busiest night of the year. So we cooked a yummy dinner and snuggled with our precious babies instead!

*I think they will soon be in size 1 diapers! The newborns are getting a little too tight on those chunky legs;)

*JP has so many more clothes than Jocelynn!! I'm hoping to go shopping this week or next to go purchase her some new footies! I hate that she wears the same ones over and over and over again… Is that weird? haha

*Time is flying by way too fast .. so I am hoping to get another photo shoot of them booked very soon! Plus, I don’t have any pictures of ME with my babies!! And it makes me very sad, so hopefully we will be able to get some soon!

*Jocelynn is still smiling so much! I love it when she smiles.. My heart just melts and I get teary eyed because it makes me so happy! JP only smiles in his sleep but hopefully smiles while awake will come soon!

*They are still going to bed around 830-9 and not waking up until 2-230. I'm hoping to eliminate that middle of the night feeding soon;) Ill let you know how it goes…fingers crossed!!

Valentines Day

My hubby came home on Valentines night and brought me these wonderful gifts….


A beautiful card, the best chocolate EVER, chocolate covered strawberries, a kissWinking smile, and a video camera!! I know; isn't he the greatest??


I didn’t have time to get the babies a valentines day outfit so I went through their closet and put JP in an I love you onesie and Jocelynn in this….


HAHA! How about I didn’t even have to glue the bow or put it on a headband… that’s in her hair!!


I also made these resurrection rolls (via pinterest HERE)  and they were delicious!! It’s a crescent roll with marshmallow, buttery, cinnamon goodness~!!
